The Sprouted Kitchen cookbook is one of my favorites right now.  It focuses on using whole and unprocessed ingredients.  So far I’ve made granola, granola bars, a shrimp and couscous dish, and now this.  Edamame mash has turned me on to a new obsession–mashes (more to come).  It has a unique texture and an almost refreshing taste.  This dish is not labor intensive, and tastes amazing–a winner in my book.  The crunch of the walnut crust on the salmon paired with the mush of the edamame make this a match made in my mouth!
