My boyfriend mocks me that my favorite kind of food is “Nouveau American Cuisine.” He likes to ask if everything is “Nuevo Americano Cuisino.”

The use of less ingredients but the result of more complex flavors.
And the ingredients speak for themselves. It’s all about eating real food!
This type of cuisine tends not to be served in “chain” restaurants, but rather neighborhood restaurants, and “sister restaurants” if anything.
