This recipe is courtesy of my running buddy, Andrea, who came over Saturday after her first 18 mile run (my 8 miler) to make these.  There’s nothing like somebody else making you breakfast (#spoiled)!  These waffles are so simple, and you will most likely have all of these ingredients already in your pantry.  If you don’t have a waffle iron, this recipe can also be used to make pancakes.  For more delicious and healthy recipes, check out Andy’s fitness Instagram, @amarnold25.

3 Ingredient Waffle
Serves 1
INGREDIENTS:
1/2 cup rolled oats
1 banana
1 egg
1 egg white
Splash of almond milk (Optional.  Add if mixture is too dry.)
Toppings (fresh fruit, honey, maple syrup, almond butter, NuttZo, etc.)

DIRECTIONS:

  1. Heat waffle iron.
  2. Place all ingredients (oats, banana, eggs) in a blender.  Blend until combined.
  3. Pour over hot waffle iron.
  4. Cook for 3 minutes.
  5. Remove from waffle iron, top with fresh strawberries, bananas, honey and NuttZo.
