This past week I tried out a new San Diego-based healthy meal delivering service called Remedy.

With the program, you receive a new menu every Wednesday. And the following Monday and Thursday, your meals are delivered to make sure they’re packaged and delivered fresh.

It’s the perfect thing when you still want to eat healthy but don’t feel like doing all the prep work or cooking.  And everything is made with 100% organic ingredients, using the best ingredients and superfoods available.

For my trial week of 6 lunches I received:

  • Organic lemon hummus with local organic raw veggies and gluten free chicken bites
  • Veggie lasagna with gluten free noodles, low fat basil ricotta, spicy no oil pesto and oven roasted tomatoes
  • Spanish style brown rice with ground organic turkey breast and a bell pepper Romesco

  • BBQ chicken salad with roasted corn. green onions, bell peppers, feta and cilantro
  • Lemon, roasted kale, organic quinoa, feta, asparagus salad with local halibut and a chia champagne vinaigrette
  • Pancetta wrapped organic asparagus with organic chicken breast and an agave dijon sauce

I loved that all of the meals were unique and gourmet.  Plus they gave me some new recipe ideas too!

One recipe that Remedy Foods provided for me to share is for Sweet Potato Quinoa Burgers with Roasted Bell Pepper Cashew Sauce.  It seems very fancy, but was actually really easy to make.  Both the burgers and the sauce have a variety of spices resulting in bit of a kick.  Try it out, and don’t forget the fancy plate drizzle!

Sweet Potato Quinoa Burgers with Roasted Bell Pepper Cashew Sauce

Yields 6-8 burgers, depending on size

INGREDIENTS:
Sweet Potato Quinoa Burger
2 C Mashed Sweet Potatoes
1 C Cooked Red Quinoa
2 Large Garlic Cloves, peeled and chopped
3/4 C Fresh Parsley, chopped
1/4 C Olive Oil
1 Tbsp Chia Seeds
½ -¾ tsp Fine Grain Sea salt or Pink Himalayan Salt, to taste
Freshly Ground Black Pepper, to taste
1½ tsp Chili Powder
1 tsp Cumin

Roasted Bell Pepper Cashew Sauce
1 C Soaked Non-salted Cashews
2 Tbsp Fresh Lemon Juice, or to taste
½ C Roasted Bell Peppers
1½ C Water
½ tsp Cumin
½ Tbsp Lemon Zest
½ Tbsp Chili Flakes
2 Cloves Fresh Garlic, peeled
Salt and Pepper, to taste

DIRECTIONS:

Sweet Potato Quinoa Burger

  1. Preheat oven to 375. Peel, chop and boil sweet potatoes until soft. Drain the water and mash sweet potatoes. Set aside to cool.
  2. Mix in cooked quinoa and remaining ingredients.
  3. Form burgers and place on a greased baking sheet. Bake burgers for 15 minutes.
  4. Carefully flip and continue baking for another 10 minutes. Set aside to cool on pan.

Roasted Bell Pepper Cashew Sauce

  1. Add all ingredients into Vitamix or blender of choice. Blend together until smooth and creamy.
  2. Set aside in refrigerator until ready to serve with burgers
